Greek-style mushrooms

Ingredients
- 500g mushrooms
- 30g butter (cooking butter)
- 1dl dry white wine
- 5 tomatoes
- 70g tomato puree
- 2 cloves of garlic
- 1 pinch of dried oregano
- Salt and pepper
- 3cl olive oil
- 1/2 tablespoon mustard
- 1cl white wine vinegar
- 1 tablespoon finely chopped parsley
Preparation method
Cut the mushrooms into quarters. Heat the butter and sauté the mushrooms for 2 minutes. Peel and chop the tomatoes. Add the wine, tomatoes and crushed garlic. Simmer for 5 minutes. Season with oregano, salt, and pepper. Remove from heat and leave to cool. In the meantime, mix together the oil, mustard and vinegar. Stir the sauce into the cooled mushroom mixture and place in the fridge. Sprinkle with parsley just before serving.
