Farmers’omelette with mushrooms

Ingredients
- 100g mixed lettuce
- 250g mushrooms
- 1 small onion
- 1 tablespoon oil
- 4 eggs
- 2 tablespoons milk
- Salt and pepper
- 75g ham in small strips
- A few sprigs of finely chopped parsley
Preparation method
Divide the lettuce over 2 plates. Clean and thinly slice the mushrooms. Peel and finely chop the onion. Heat the oil in a frying pan and fry the onions and mushrooms for a few minutes. Beat the eggs with the milk, pepper and a little salt. Stir in the ham. Pour the eggs over the mushrooms. Cook the omelette on a low fry until it is dry. Slide it onto a plate and cut in two. Place a half on each of the plates with lettuce and sprinkle with parsley.
